Ingredients
  

For the Filling
  • 4 large eggs
  • 1/4 cup milk
  • 1 cup cooked and crumbled Halal breakfast sausage or your favorite protein
  • 1 cup shredded cheese cheddar or your choice
  • 1/2 cup diced bell peppers any color
  • 1/4 cup chopped green onions
  • 4 large flour tortillas
  • to taste salt
  • to taste pepper
  • optional Salsa for serving

Method
 

Preparation
  1. Gather all your ingredients. Crack the eggs into a bowl, add the milk, and whisk until well blended. Set the mixture aside.
Cooking the Filling
  1. In a non-stick skillet over medium heat, add your cooked and crumbled Halal breakfast sausage, cooking until slightly browned. Toss in the diced bell peppers and let them sauté for about 2-3 minutes until they’re soft.
  2. Lower the heat slightly and pour the egg mixture into the skillet. Stir gently, allowing the eggs to cook evenly. Add salt and pepper to taste as they start to set. Once almost fully cooked, fold in the shredded cheese and chopped green onions until the cheese is melted.
Assembling the Burritos
  1. Take a large tortilla and spoon a generous portion of the egg filling into the center. Fold both sides of the tortilla inwards and then roll it up from the bottom to create a burrito shape. Repeat with the remaining tortillas.
Toasting the Burritos
  1. If you like a crispy exterior, place the burritos seam-side down in the skillet for 1-2 minutes per side until golden brown.
Serving
  1. Cut the burritos in half for easy serving and enjoy with your favorite salsa on the side!

Notes

For substitutions, try swapping the Halal breakfast sausage for turkey or beef sausage! You can also toss in some spinach or mushrooms. Make sure to have everything prepped in advance to minimize cooking time. Avoid overcooking the eggs; they should be fluffy and not rubbery.
