Preparation
- Start by gathering all your ingredients. In a medium bowl, crack the eggs and whisk them together with the milk, a pinch of salt, and pepper.
Cooking
- Heat a skillet over medium heat and add a splash of oil. Sauté the diced bell peppers and onion for about 3-4 minutes until they’re slightly tender.
- Pour the egg mixture into the skillet with the veggies. Stir gently to combine, allowing the eggs to cook gradually. As the eggs begin to firm up, add the crumbled breakfast sausage and half of the shredded cheese. Continue to stir until the eggs are fully cooked, and the cheese is melted.
- Warm the flour tortillas in a separate skillet or microwave. Once warmed, scoop a generous portion of the egg and sausage mixture onto each tortilla. Fold the sides in and roll from the bottom up to form tightly wrapped burritos.
- Place the filled burritos seam-side down in the skillet over medium heat for another few minutes to crisp the outside and melt any additional cheese you might want on top.
- Slice the burritos in half and serve them warm with salsa and avocado on the side.
Notes
For added customization, swap the sausage for chicken or turkey breakfast sausage. Feel free to add leftover veggies, like zucchini or mushrooms, and experiment with different cheeses or fresh herbs like cilantro. Avoid rushing the egg-cooking process for fluffier results.
