Preparation and Searing
- Preheat your oven to 350°F (175°C).
- In a large, oven-safe skillet, heat the olive oil over medium-high heat.
- Season the chicken thighs with salt and pepper, then add them to the skillet, skin-side down.
- Sear for about 5-7 minutes until the skin is golden brown. Flip the chicken over and cook for an additional 3-4 minutes.
Sautéing and Braising
- Remove the chicken from the skillet and set it aside.
- In the same skillet, add the chopped onion and minced garlic. Sauté for about 2 minutes until they start to soften.
- Pour in the chicken broth, then add sliced carrots and diced potatoes. Stir in the thyme and season with additional salt and pepper.
- Place the seared chicken thighs back into the skillet, skin-side up.
- Transfer the skillet to your preheated oven and let it braise for about 1 hour, or until the chicken is cooked through and the vegetables are tender.
- Remove from the oven, and let it sit for a few minutes. Serve warm.
Notes
To store leftovers, cool the braised chicken completely before transferring it to an airtight container. Refrigerated, it will last for up to 3 days. You can also freeze it for up to 3 months. When reheating, gently warm it on the stove over low heat or microwave in short bursts until heated through.
