Ingredients
  

Boba Ingredients
  • 1 cup tapioca starch Use high-quality tapioca starch for the best results.
  • ½ cup water Should be at room temperature for better texture.
  • 2 tablespoons brown sugar
  • Food coloring Optional for color.

Method
 

Preparation
  1. In a bowl, combine the tapioca starch and brown sugar. Gradually add water and mix until a dough forms.
  2. Knead the dough for about 5-7 minutes, until it's smooth and elastic. If it's too sticky, add a tiny bit more tapioca starch.
  3. Break off small pieces of the dough and roll them into tiny balls about the size of a marble. If using food coloring, mix it in now.
Cooking
  1. Boil a pot of water. Once boiling, add the pearls and cook for 25-30 minutes, or until they are floating and chewy.
  2. Once cooked, remove the pearls from the pot and rinse them with cool water. They are now ready to be added to your bubble tea!

Notes

Store leftover pearls in an airtight container at room temperature for up to 4 hours. Refrigerating them may make them hard, and you’ll need to reheat them in warm water.
