Preparation
- In a medium saucepan, combine the blueberries, sugar, cornstarch, and lemon juice. Cook on medium heat until the mixture starts to bubble and thickens, about 5-7 minutes. Remove it from the heat and let it cool slightly.
- While your filling is cooling, preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a floured surface, carefully roll out the puff pastry sheets. Cut each sheet into squares, roughly 4x4 inches.
Assembly and Baking
- Place about 2 tablespoons of the blueberry mixture in the center of each pastry square. Fold the corners of the dough over to create a triangle shape, pressing the edges to seal. Use a fork to crimp the edges for a decorative touch.
- In a small bowl, whisk the egg. Brush the tops of each turnover with the egg wash to achieve a beautiful golden color when baked.
- Place the turnovers on the prepared baking sheet and bake for 20-25 minutes, or until they are puffed and golden brown.
- Once baked, remove them from the oven and let cool for a few minutes. Top with powdered sugar if desired and serve warm.
Notes
Keep an eye on the baking time. Each oven is different, so check your turnovers at the 20-minute mark to ensure they don’t over-bake. Your Blueberry Turnovers can be stored at room temperature for up to 2 days, or refrigerate for up to a week. For freezing, wrap individually and store in an airtight container for up to 3 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
