For the Blueberry Filling
  • 2 cups fresh blueberries
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
For the Crust
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1 large egg
  • 1/2 teaspoon baking powder

Preparation and Baking
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the fresh blueberries, granulated sugar, cornstarch, lemon juice, vanilla extract, and salt. Gently toss the mixture until the blueberries are evenly coated. Set aside.
  3. In a large bowl, mix together the flour, softened butter, powdered sugar, egg, and baking powder. Use a pastry cutter or your fingertips to combine until the mixture resembles coarse crumbs.
  4. Take about two-thirds of the dough and press it evenly into the bottom of a greased 9×9-inch baking dish to form the base.
  5. Pour the blueberry mixture over the crust, spreading it evenly.
  6. Roll out the remaining dough between two pieces of parchment paper to about 1/8 inch thick. Cut into strips and create a lattice design over the blueberry filling.
  7. Bake in the preheated oven for 30-35 minutes or until the crust is golden brown and the blueberries are bubbling.
  8. Let the bars cool for about 10 minutes before slicing into squares.

Notes

For best results, use fresh blueberries. You can substitute coconut sugar for granulated sugar for a healthier option. Store the bars in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes before serving.
