Cobbler Batter
  • 1 cup sugar Remaining amount for batter.
  • 1 cup all-purpose flour For the cobbler base.
  • 1 cup milk Use whole milk for creaminess.
  • 1/2 cup butter, melted For richness in flavor.
  • 2 teaspoons baking powder To help the batter rise.
  • 1 teaspoon vanilla extract Adds extra flavor.
  • 1/4 teaspoon salt Enhances flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, toss the sliced peaches and blueberries with half a cup of sugar and let them sit for 10-15 minutes.
  3. In another bowl, combine the flour, remaining sugar, baking powder, and salt. Stir in the milk, melted butter, and vanilla extract until the mixture is well combined.
  4. Grease a 9×13-inch baking dish. Pour the batter evenly into the dish, then gently spoon the fruit mixture on top without stirring.
Baking
  1. Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden and the fruit is bubbling.
Serving
  1. Allow the cobbler to cool for at least 10 minutes before serving warm with a scoop of ice cream or whipped cream.

For variations, swap peaches for nectarines or add other berries. Ensure your oven is fully preheated and avoid stirring the fruit into the batter for a layered appearance.
