Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring gently until just combined.
- Fold in the blueberries, white chocolate chips, lemon zest, and lemon juice carefully to avoid breaking the blueberries.
Baking
- Scoop tablespoons of dough onto a lined baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Cookies can be stored at room temperature in an airtight container for up to a week. Unbaked dough can be frozen for up to three months. Reheat in microwave for 10-15 seconds or oven at 350°F for 5-10 minutes.
