Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt Adjust salt based on butter used.
Mix-ins
  • 1 cup fresh blueberries Fresh blueberries recommended for best flavor.
  • 1 cup white chocolate chips

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring gently until just combined.
  5. Fold in the blueberries, white chocolate chips, lemon zest, and lemon juice carefully to avoid breaking the blueberries.
Baking
  1. Scoop tablespoons of dough onto a lined baking sheet, leaving space between each cookie.
  2. Bake for 12-15 minutes, or until the edges are golden brown.
  3. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Cookies can be stored at room temperature in an airtight container for up to a week. Unbaked dough can be frozen for up to three months. Reheat in microwave for 10-15 seconds or oven at 350°F for 5-10 minutes.
