  • 2 cups fresh blueberries Make sure to wash your blueberries thoroughly.
  • 1 cup fresh lemon juice Fresh lemon juice is key to the tangy flavor.
  • 1/2 cup granulated sugar Adjust sweetness to taste or substitute with natural sweeteners.
  • 1 cup water
  • 1 tablespoon lemon zest Adds an extra layer of aroma.

Preparation
  1. In a blender, combine the fresh blueberries and water. Blend until smooth to create a blueberry puree. You can strain the mixture through a fine mesh sieve for a smoother texture if desired.
  2. In a separate bowl, whisk together the fresh lemon juice, granulated sugar, and lemon zest until the sugar is fully dissolved.
  3. Pour the blueberry puree into the lemon mixture, stirring gently to combine.
  4. Carefully pour the combined mixture into popsicle molds, leaving some space at the top. Insert sticks.
  5. Place the molds in the freezer for at least 4-6 hours or until they’re completely frozen.
  6. To release the popsicles, run the molds briefly under warm water. Serve immediately.

Notes

You can garnish these popsicles with fresh mint leaves or a drizzle of honey. Consider using lime juice for a different twist.
