- In a blender, combine the fresh blueberries and water. Blend until smooth to create a blueberry puree. You can strain the mixture through a fine mesh sieve for a smoother texture if desired.
- In a separate bowl, whisk together the fresh lemon juice, granulated sugar, and lemon zest until the sugar is fully dissolved.
- Pour the blueberry puree into the lemon mixture, stirring gently to combine.
- Carefully pour the combined mixture into popsicle molds, leaving some space at the top. Insert sticks.
- Place the molds in the freezer for at least 4-6 hours or until they’re completely frozen.
- To release the popsicles, run the molds briefly under warm water. Serve immediately.
Notes
You can garnish these popsicles with fresh mint leaves or a drizzle of honey. Consider using lime juice for a different twist.
