  • 1/4 teaspoon salt
  • 1 cup fresh blueberries

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together the softened cream cheese and butter until light and fluffy.
  3. Gradually add the sugar to the cream mixture, blending until smooth.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients into the wet mixture, mixing just until combined.
  7. Gently fold in the fresh blueberries.
  8. Grease a 9x5-inch loaf pan and pour the batter in, smoothing with a spatula.
Baking
  1. Place the loaf pan in the preheated oven and bake for 60 minutes, or until a toothpick inserted comes out clean.
  2. Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

For optimal flavor, use fresh blueberries. If using frozen, do not thaw. You can add lemon zest or cinnamon for an extra twist. Keep an eye on doneness, covering with foil if browning too quickly.
