Ingredients
  

Crust
  • 1/2 cup butter, melted Use unsalted butter for best results.
  • 1/2 cup all-purpose flour
Filling
  • 1 cup cream cheese, softened Ensure it's fully softened to avoid lumps.
  • 1/2 cup sugar
  • 2 eggs Room temperature preferred.
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries Gently fold into the mixture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8x8-inch baking dish or line it with parchment paper.
Make the Crust
  1. In a mixing bowl, combine melted butter and flour. Stir until well combined.
  2. Press the mixture evenly into the bottom of the prepared baking dish.
Make the Filling
  1. In another bowl, beat softened cream cheese and sugar together until smooth.
  2. Add eggs and vanilla extract to the mixture, beating until well incorporated.
  3. Gently fold in the fresh blueberries.
Combine and Bake
  1. Pour the cream cheese mixture over the crust and spread evenly.
  2. Bake for about 30 minutes, or until the center is set and the top is slightly golden.
  3. A toothpick inserted should come out clean.
Cool and Serve
  1. Remove the dish from the oven and let it cool completely.
  2. Cut into bars and serve chilled.

Notes

For a lighter version, use low-fat cream cheese. Store in an airtight container for up to one week in the fridge or freeze for up to three months.
