Preparation
- In a mixing bowl, beat the softened cream cheese and powdered sugar together until smooth. Fold in the fresh blueberries gently to avoid smashing them.
- Take one slice of bread, spread a generous amount of the cream cheese mixture on top, and then place another slice of bread on top to form a sandwich. Repeat until all slices are used.
- In a separate bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
Cooking
- Heat a skillet or griddle over medium heat and add butter.
- Dip each stuffed sandwich into the egg mixture, making sure to coat both sides well.
- Place the sandwiches on the skillet and cook for about 3-4 minutes on each side or until golden brown. Make sure to keep an eye on them to prevent burning!
Serving
