  • 1 cup pitted Medjool dates (soaked in warm water for 10 minutes if dry)
  • 1 cup raw cashews (or any nut of your preference)
  • 1/2 cup rolled oats
  • 1/4 cup plant-based protein powder (vanilla flavor works best)
  • 1/2 cup blueberries (fresh or frozen) Gently mix in to avoid breaking them
  • 2 tablespoons creamy almond butter (or any nut butter)
  • 1 teaspoon vanilla extract (ensure it’s alcohol-free)
  • a pinch sea salt

Method
 

Preparation
  1. Soak the dates in warm water for about 10 minutes if they aren’t soft. Drain them once ready.
  2. In a food processor, combine the soaked dates, raw cashews, rolled oats, plant-based protein powder, almond butter, vanilla extract, and sea salt. Blend until you achieve a dough-like consistency.
  3. Gently mix in the blueberries by hand, being careful to keep them intact.
  4. Scoop out about a tablespoon of the mixture and roll it into a small ball. Repeat until all the dough is shaped.
  5. For a firmer texture, place the bites in the refrigerator for about 30 minutes.
  6. Roll the bites lightly in shredded coconut or crushed nuts before serving.

Notes

Store the bites in an airtight container in the refrigerator for up to a week. They freeze well; separate them with parchment paper before placing in a freezer-safe bag.
