Preparation
- Soak the dates in warm water for about 10 minutes if they aren’t soft. Drain them once ready.
- In a food processor, combine the soaked dates, raw cashews, rolled oats, plant-based protein powder, almond butter, vanilla extract, and sea salt. Blend until you achieve a dough-like consistency.
- Gently mix in the blueberries by hand, being careful to keep them intact.
- Scoop out about a tablespoon of the mixture and roll it into a small ball. Repeat until all the dough is shaped.
- For a firmer texture, place the bites in the refrigerator for about 30 minutes.
- Roll the bites lightly in shredded coconut or crushed nuts before serving.
Notes
Store the bites in an airtight container in the refrigerator for up to a week. They freeze well; separate them with parchment paper before placing in a freezer-safe bag.
