  • 1 lb beef steak (sirloin or flank)
  • 1 tablespoon olive oil
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 1 tablespoon fajita seasoning (store-bought or homemade)
  • Tortillas (for serving)

Method
 

Preparation
  1. Start by slicing your beef steak into thin strips against the grain.
  2. In a medium bowl, mix the sliced steak with olive oil and fajita seasoning until well-coated. Let it marinate for about 10 minutes.
  3. Heat your Blackstone griddle over medium-high heat until it is hot.
Cooking
  1. Add the marinated steak to the griddle in a single layer. Sear for about 2-3 minutes until browned, then flip and cook for an additional 1-2 minutes.
  2. Toss in the sliced bell pepper and onion, cooking for 5-7 minutes until tender and charred.
  3. In the last minute of cooking, warm your tortillas on the griddle.
Serving
  1. Serve the steak and veggies in warmed tortillas, topped with your favorite toppings.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months. Reheat in a skillet for best results.
