Preparation
- Start by slicing your beef steak into thin strips against the grain.
- In a medium bowl, mix the sliced steak with olive oil and fajita seasoning until well-coated. Let it marinate for about 10 minutes.
- Heat your Blackstone griddle over medium-high heat until it is hot.
Cooking
- Add the marinated steak to the griddle in a single layer. Sear for about 2-3 minutes until browned, then flip and cook for an additional 1-2 minutes.
- Toss in the sliced bell pepper and onion, cooking for 5-7 minutes until tender and charred.
- In the last minute of cooking, warm your tortillas on the griddle.
Serving
- Serve the steak and veggies in warmed tortillas, topped with your favorite toppings.
