Preparation
- Start by heating your Blackstone griddle over medium heat.
- Place one tortilla on the griddle to warm it slightly.
- Spread about half a cup of refried beans evenly on the warmed tortilla.
- Sprinkle half of the Mexican cheese blend on top of the beans.
- Add a few slices of jalapeƱos and some salsa over the cheese.
- Carefully place the second tortilla on top like a sandwich.
- Allow it to cook for about 3-4 minutes or until the bottom tortilla is crispy and brown.
- Using a spatula, gently flip the pizza and cook the other side for an additional 3-4 minutes until the cheese is melted and gooey.
- Remove from the heat and top with diced avocado, a dollop of sour cream, and a sprinkle of fresh cilantro.
- Cut into wedges and serve immediately.
Notes
For a vegetarian version, omit any meat toppings but keep the cheese. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the griddle or in an oven to maintain crispiness.
