  • 2 large tortillas
  • 1 cup Mexican cheese blend
  • 1 cup refried beans
  • 1-2 jalapeƱos, sliced
  • 1/2 cup salsa
  • 1 avocado, diced
  • 1/4 cup sour cream
  • Fresh cilantro for garnish

Method
 

Preparation
  1. Start by heating your Blackstone griddle over medium heat.
  2. Place one tortilla on the griddle to warm it slightly.
  3. Spread about half a cup of refried beans evenly on the warmed tortilla.
  4. Sprinkle half of the Mexican cheese blend on top of the beans.
  5. Add a few slices of jalapeƱos and some salsa over the cheese.
  6. Carefully place the second tortilla on top like a sandwich.
  7. Allow it to cook for about 3-4 minutes or until the bottom tortilla is crispy and brown.
  8. Using a spatula, gently flip the pizza and cook the other side for an additional 3-4 minutes until the cheese is melted and gooey.
  9. Remove from the heat and top with diced avocado, a dollop of sour cream, and a sprinkle of fresh cilantro.
  10. Cut into wedges and serve immediately.

Notes

For a vegetarian version, omit any meat toppings but keep the cheese. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the griddle or in an oven to maintain crispiness.
