Preparation
- Wash the baby potatoes thoroughly and place them in a large pot. Fill the pot with water to ensure the potatoes are submerged.
- Add a pinch of salt to the water.
Cooking
- Turn the heat to high and bring the water to a rolling boil. Let the potatoes boil for about 15-20 minutes, or until they are fork-tender.
- Once cooked, drain the potatoes and return them to the pot. Using a potato masher or a fork, gently smash each potato, creating a flat surface.
- Brush both sides of each smashed potato with olive oil, and season with salt and pepper for flavor.
- Preheat your Blackstone griddle over medium-high heat. Arrange the smashed potatoes on the griddle and cook until golden brown, about 4-5 minutes per side.
- Remove the crispy potatoes from the griddle and place them on a serving platter.
- Top generously with cheddar cheese, sour cream, chopped green onions, or any other desired toppings.
Serving
- Serve the loaded smashed potatoes warm, surrounded by family and friends.
Notes
For a healthier twist, replace sour cream with Greek yogurt or use mozzarella cheese. Store leftovers in an airtight container in the fridge for up to 3 days.
