  • 2 pounds baby potatoes Choose small, tender baby potatoes for best results.
  • 1 cup shredded cheddar cheese Feel free to substitute with halal cheese if needed.
  • 1/2 cup sour cream Can be replaced with Greek yogurt as a healthier option.
  • 1/4 cup green onions, chopped
  • 2 tablespoons olive oil
  • to taste salt and pepper

Method
 

Preparation
  1. Wash the baby potatoes thoroughly and place them in a large pot. Fill the pot with water to ensure the potatoes are submerged.
  2. Add a pinch of salt to the water.
Cooking
  1. Turn the heat to high and bring the water to a rolling boil. Let the potatoes boil for about 15-20 minutes, or until they are fork-tender.
  2. Once cooked, drain the potatoes and return them to the pot. Using a potato masher or a fork, gently smash each potato, creating a flat surface.
  3. Brush both sides of each smashed potato with olive oil, and season with salt and pepper for flavor.
  4. Preheat your Blackstone griddle over medium-high heat. Arrange the smashed potatoes on the griddle and cook until golden brown, about 4-5 minutes per side.
  5. Remove the crispy potatoes from the griddle and place them on a serving platter.
  6. Top generously with cheddar cheese, sour cream, chopped green onions, or any other desired toppings.
Serving
  1. Serve the loaded smashed potatoes warm, surrounded by family and friends.

Notes

For a healthier twist, replace sour cream with Greek yogurt or use mozzarella cheese. Store leftovers in an airtight container in the fridge for up to 3 days.
