  • 2 lbs boneless chicken thighs or breasts, diced Can use either thighs or breasts based on preference.
  • 1 cup broccoli florets
  • 1 cup zucchini, sliced
  • 1 cup bell peppers, sliced (any color)
  • 1 cup mushrooms, sliced
Marinade and Cooking
  • 3 tablespoons soy sauce Check for Halal compliance.
  • 2 tablespoons garlic, minced
  • 2 tablespoons cooking oil (like vegetable or canola oil)
  • 1 tablespoon sesame oil Optional but recommended for flavor.
  • to taste Salt and pepper
Garnish
  • to taste green onions, sliced For garnish.
  • to taste sesame seeds For garnish.

Method
 

Preparation
  1. Start by washing and chopping all your vegetables, and ensure your chicken is diced into bite-sized pieces.
  2. In a bowl, combine diced chicken, soy sauce, minced garlic, salt, and pepper. Stir well and let it marinate for at least 15 minutes while you prepare your griddle.
Cooking
  1. Preheat the Blackstone Griddle until it reaches medium-high heat. Add the oil and make sure it’s evenly spread over the surface.
  2. Once hot, add the marinated chicken to the griddle. Cook for 6-8 minutes on one side without moving it to allow for a good sear. Then flip and cook for an additional 6-8 minutes until cooked through.
  3. Once the chicken is nearly cooked, add the broccoli, zucchini, bell peppers, and mushrooms. Stir well and cook for an additional 5-7 minutes until the veggies are tender but still crisp.
  4. Drizzle sesame oil over the chicken and veggies for added flavor, and give it a final stir. Taste and adjust seasonings if needed.
Serving
  1. Remove from the heat, garnish with chopped green onions and sesame seeds, and serve hot with rice or noodles if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Freeze for up to 3 months. Reheat gently using the stove or microwave to maintain texture.
