Preparation
  1. Start by pounding the chicken breasts to an even thickness, about half an inch thick. Season both sides with salt and pepper.
  2. In a shallow bowl, mix together the breadcrumbs and grated Parmesan cheese. Dip each chicken breast into the breadcrumb mixture, pressing down to ensure a good coating on all sides.
Cooking
  1. Preheat your Blackstone griddle to medium-high heat. Add a drizzle of olive oil, ensuring an even coating across the cooking surface.
  2. Place the coated chicken breasts on the griddle. Let them cook for about 5-7 minutes on each side until they’re golden brown and cooked through (an internal temperature of 165°F).
  3. Once the chicken is fully cooked, spoon marinara sauce over each piece and place a slice of mozzarella cheese on top. Allow it to melt, about 2-3 minutes.
Assembly
  1. Slice open the sandwich rolls and place a chicken breast with melted cheese and sauce inside each one. Top with fresh basil for that added burst of flavor.
