Preparation
- Start by slicing the bell pepper and onion into thin strips. For the chicken, cut it into thin strips to ensure even cooking.
- In a bowl, combine the chicken, olive oil, fajita seasoning, salt, and pepper. Toss everything together until the chicken is evenly coated.
Cooking
- Turn on your Blackstone griddle and preheat it to medium-high heat for about 5 minutes.
- Spread the seasoned chicken strips onto the griddle and let them cook for about 5-7 minutes, occasionally stirring to ensure they cook evenly.
- Once the chicken is almost cooked through, add the sliced bell peppers and onions to the griddle. Cook everything together for an additional 5-7 minutes until the veggies are tender and the chicken is thoroughly cooked.
- While the chicken and veggies are cooking, warm the flour tortillas on the griddle for about 30 seconds on each side.
- Once everything is cooked, assemble your fajitas by placing the chicken and veggie mixture on a tortilla and topping with your favorite toppings. Roll it up and enjoy!
Notes
For a spicy kick, try adding jalapeƱos or substituting the chicken with beef or shrimp. Avoid overcrowding the griddle for even cooking. Store leftovers in an airtight container for 3-4 days.
