Ingredients
  

For the filling
  • 2 cups fresh blackberries Can substitute with frozen or other fruits.
  • 1 teaspoon lemon juice Adds brightness to the filling.
  • 1 tablespoon granulated sugar Used for sweetening the filling.
For the crust
  • 1 cup all-purpose flour
  • 1 cup rolled oats Can substitute with quick oats.
  • 1/2 cup brown sugar Provides depth of flavor.
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt Enhances sweetness.
  • 1/2 cup unsalted butter, melted Can be replaced with a vegan alternative.
  • 1 teaspoon vanilla extract For additional flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking pan (approximately 8×8 inches) with parchment paper, letting some hang over the sides for easy removal later.
  2. In a bowl, combine the blackberries, lemon juice, and one tablespoon of granulated sugar. Set aside.
  3. In a separate bowl, mix the all-purpose flour, rolled oats, brown sugar, granulated sugar, and salt. Stir in the melted butter and vanilla extract until the mixture resembles wet sand.
  4. Take about two-thirds of the crumble mixture and press it evenly into the bottom of your prepared pan.
  5. Evenly distribute the blackberry mixture over the crust.
  6. Sprinkle the remaining crumble over the berries, covering them completely.
Baking
  1. Bake for about 30-35 minutes, until the top is golden brown and the filling is bubbly.
  2. Allow the bars to cool for at least 20 minutes before using the parchment to lift them out of the pan. Cut into squares.

Notes

Store in an airtight container in the refrigerator for up to a week, or freeze for up to three months. Reheat in the oven at 350°F (175°C) for about 10 minutes when ready to enjoy.
