  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) sweet corn, drained
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
Dressing Ingredients
  • 1/4 cup lime juice (approximately the juice of 2 limes)
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Start by rinsing the black beans and the sweet corn in a colander until the water runs clear.
  2. Dice the red and green bell peppers, and finely chop the red onion and cilantro.
Mixing
  1. In a large mixing bowl, combine the black beans, sweet corn, red bell pepper, green bell pepper, red onion, and cilantro.
Dressing
  1. In a small bowl, whisk together the lime juice and olive oil. Add salt and pepper to taste.
Combining
  1. Pour the dressing over the mixed ingredients and toss everything gently until well coated.
  2. Let it sit for about 10 minutes to allow the flavors to marry.
Final Touch
  1. Before serving, give it a quick taste and adjust the seasoning if needed.

Notes

For better flavor, allow the salad to chill in the fridge for an hour before serving. If you're not a fan of a particular ingredient, feel free to swap it out! Sliced cucumbers or diced tomatoes can work wonderfully.
