Preparation
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a mixing bowl, mix together the Biscoff cookie butter, granulated sugar, brown sugar, and egg until smooth. Add vanilla extract.
- In another bowl, sift together the flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spaced about 2 inches apart.
Baking
- Bake in the preheated oven for 10-12 minutes, or until edges are slightly golden.
- Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
For best results, measure flour accurately. Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
