Preparation
  1. Crush the Biscoff cookies in a food processor or a sealed bag with a rolling pin until they turn into fine crumbs.
  2. In a large mixing bowl, combine the crushed cookies, softened cream cheese, protein powder, almond flour, maple syrup (or honey), vanilla extract, and a pinch of salt.
  3. Use a spatula or your hands to mix everything until well combined. The mixture should be sticky enough to form into balls.
  4. Take small portions of the mixture and roll them into bite-sized balls—about 1 inch in diameter.
  5. Place the formed balls onto a plate or baking sheet, then refrigerate for at least 30 minutes to help them firm up.
  6. Enjoy your protein balls right away or store for later.

Notes

To store, place in an airtight container in the fridge for up to one week. For longer storage, freeze for up to three months. Allow frozen balls to sit at room temperature for about 10 minutes to regain their texture.
