Preparation
- Crush the Biscoff cookies until they resemble fine crumbs, using a plastic bag and a rolling pin or a food processor.
- In a bowl, combine the crushed Biscoff cookies, softened cream cheese, and half of the caramel sauce. Mix until fully combined.
- Shape the mixture into small balls, about one inch in diameter, and place each on a baking sheet lined with parchment paper.
- Refrigerate the truffles for about 30 minutes to firm up.
- Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave until smooth.
- Dip each truffle into the melted chocolate, coating completely. Use a fork to lift it out, allowing excess chocolate to drip off.
- Before the chocolate sets, drizzle caramel sauce over the top and sprinkle with sea salt.
- Let the chocolate set at room temperature or refrigerate it. Enjoy your Biscoff Caramel Truffles!

Store in an airtight container in the refrigerator for up to one week or freeze for three months. Thaw in the refrigerator before serving.
