Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together 2 3/4 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of baking powder. Set aside.
- In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 1/2 cups of white sugar until light and fluffy.
- Beat in 1 egg, followed by 1 teaspoon of vanilla extract and 1/2 teaspoon of almond extract. Mix until fully incorporated.
- Gradually add the dry ingredient mixture to the wet ingredients, stirring just until the dough comes together. Be careful not to overmix!
- Roll the dough into large balls (about 2 inches in diameter) and then roll them in a bowl of sugar. Place them on a baking sheet lined with parchment paper.
Baking
- Bake in your preheated oven for 10-12 minutes or until the edges just start to turn golden brown.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
- Indulge in the warm, soft goodness!
Notes
For perfect cookies, ensure butter is softened at room temperature, measure flour accurately, and consider chilling the dough before baking. Customize with toppings like sprinkles or Halal-friendly chocolate chips for added flair. Store in an airtight container for up to one week, or freeze for up to three months.
