  • 1 1/2 cups white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup sugar for rolling

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together 2 3/4 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of baking powder. Set aside.
  3. In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 1/2 cups of white sugar until light and fluffy.
  4. Beat in 1 egg, followed by 1 teaspoon of vanilla extract and 1/2 teaspoon of almond extract. Mix until fully incorporated.
  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring just until the dough comes together. Be careful not to overmix!
  6. Roll the dough into large balls (about 2 inches in diameter) and then roll them in a bowl of sugar. Place them on a baking sheet lined with parchment paper.
Baking
  1. Bake in your preheated oven for 10-12 minutes or until the edges just start to turn golden brown.
  2. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
