  • 2 cups cooked shredded chicken
  • 1 can white beans (e.g., cannellini or great northern beans)
  • 1 cup chicken broth Use Halal-certified broth for a Halal version.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup corn (optional) Can be added for extra texture and flavor.
  • Fresh cilantro for garnish

Method
 

Cooking Instructions
  1. In a large pot, heat a splash of oil over medium heat.
  2. Add the diced onion and minced garlic, sautéing until fragrant and the onion becomes translucent, about 3-5 minutes.
  3. Stir in the shredded chicken, white beans, diced green chilies, chicken broth, cumin, and paprika.
  4. Season with salt and pepper to taste. If using corn, stir it in at this stage.
  5. Bring the mixture to a gentle simmer, allowing it to cook for about 20 minutes so all the flavors meld together beautifully.
  6. To serve, ladle the chili into bowls and garnish with fresh cilantro.

Notes

For a spicier version, consider adding jalapeños or cayenne pepper when sautéing the onions. Store leftovers in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 3 months.
