- In a large pot, heat a splash of oil over medium heat.

- Stir in the shredded chicken, white beans, diced green chilies, chicken broth, cumin, and paprika.
- Season with salt and pepper to taste. If using corn, stir it in at this stage.
- Bring the mixture to a gentle simmer, allowing it to cook for about 20 minutes so all the flavors meld together beautifully.
- To serve, ladle the chili into bowls and garnish with fresh cilantro.
Notes
