  • 1 teaspoon baking powder Ensure it's fresh for best results.
  • 1/2 teaspoon baking soda Ensure it's fresh for best results.
  • 1 teaspoon ground cinnamon For a warm spice flavor.
  • 1/2 teaspoon ground nutmeg For added spice.
  • 1/4 teaspoon salt Enhances the sweetness.

  • 1 teaspoon vanilla extract Enhances flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.
  2. In a large bowl, combine the canned pumpkin, sugar, vegetable oil, and eggs. Stir until smooth and well combined.
  3. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; some lumps are just fine.
  5. Stir in the vanilla extract to enhance the flavor.
Baking
  1. Pour the batter into the prepared baking dish, spreading it evenly. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the bars to cool in the pan on a wire rack before slicing them into squares.

Notes

For best texture, avoid overbaking. Store in an airtight container for freshness. If freezing, these bars can last up to 3 months.
