Ingredients
  

Wet Ingredients
  • 1 cup sugar Granulated sugar
  • 1 cup brown sugar Packed brown sugar
  • 1 cup pumpkin puree Canned or homemade
  • 1 cup vegetable oil Can substitute with another neutral oil
  • 4 large eggs Or 1/4 cup unsweetened applesauce per egg as a substitute
Dry Ingredients
  • 2 cups all-purpose flour
  • 2 tsps baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the granulated sugar and brown sugar until well blended.
  3. Add the pumpkin puree and vegetable oil to the sugar mixture, mixing until smooth.
  4. Add the eggs one at a time, blending thoroughly after each addition.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  7. Grease a 9x13 inch baking pan and pour the batter in, smoothing the top.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the bars to cool completely before cutting them into squares.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. For freezing, keep for up to three months. Reheat in microwave or low oven to retain soft texture.
