  • 1 cup unsalted butter, softened (use a halal-certified brand)
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract (halal)

  • 2 cups semi-sweet chocolate chips
  • 1/2 cup chopped nuts (almonds or walnuts) Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and sea salt. Set aside.
  3. In another bowl, use a handheld mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until incorporated.
  6. Gently fold in the chocolate chips and nuts if using.
  7. Pour the dough onto the prepared baking sheet, shaping it into a large circle about 1 inch thick.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown, and the center looks slightly underbaked.
  2. Allow the cookie to cool on the baking sheet for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a thicker cookie, chill the dough for 30 minutes before baking. Adjust the baking time depending on your oven's characteristics. Experiment with flavors like a pinch of cinnamon or almond extract.
