Preparation
- Preheat your oven to 425°F (220°C).
- Peel the sweet potatoes and cut them into evenly-sized cubes, about 1-inch in size.
- In a large bowl, combine the sweet potato cubes with olive oil, salt, black pepper, ground cinnamon, and garlic powder. Toss until well-coated.
- Lay the seasoned sweet potatoes in a single layer on a baking sheet. Avoid overcrowding.
Cooking
- Place the baking sheet in the oven and roast for 30-40 minutes, flipping halfway through.
- Toss in your chopped herbs or nuts during the last 5 minutes of cooking for added flavor and crunch.
- Once roasted, remove from the oven and let cool slightly before serving.
Notes
Cut sweet potatoes into uniform sizes to guarantee even cooking. Leftovers can be stored in an airtight container in the fridge for up to 4 days.
