  • 2 cups mixed vegetables (carrots, peas, corn, etc.)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Preparation
  1. Start by washing and chopping your vegetables — the onion, carrots, and any others you’ve chosen for your Best Chicken Vegetable Soup. This prep not only saves time but also makes the cooking process smoother.
Cooking
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the aroma fills the room and the onions turn translucent, about 3-4 minutes.

  5. Add thyme, salt, and pepper to taste.
  6. Reduce the heat to low and let it all simmer uncovered for about 15-20 minutes, allowing the flavors to mingle.
  7. Once everything is perfectly cooked, ladle your Best Chicken Vegetable Soup into bowls. Feel free to garnish with fresh herbs or a squeeze of lemon for an extra zing!

Notes
