Preparation
- Start by washing and chopping your vegetables — the onion, carrots, and any others you’ve chosen for your Best Chicken Vegetable Soup. This prep not only saves time but also makes the cooking process smoother.
Cooking
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the aroma fills the room and the onions turn translucent, about 3-4 minutes.
- Toss in the diced chicken breast into the pot. Stir occasionally, cooking until it’s no longer pink, about 5-7 minutes.
- Introduce your mixed vegetables into the pot. Stir them in to combine, allowing them to cook for another 2-3 minutes.
- Pour the chicken broth into the pot and bring the mixture to a boil. Scrape the bottom of the pot to release any flavors sticking there!
- Add thyme, salt, and pepper to taste.
- Reduce the heat to low and let it all simmer uncovered for about 15-20 minutes, allowing the flavors to mingle.
- Once everything is perfectly cooked, ladle your Best Chicken Vegetable Soup into bowls. Feel free to garnish with fresh herbs or a squeeze of lemon for an extra zing!
Notes
For substitutions, chicken thighs can be used instead of chicken breast. For a vegetarian twist, substitute chicken with chickpeas or tofu. Be mindful of not overcooking the vegetables to maintain their vibrant texture.
