Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, blending until just combined.
  5. Fold in the oats until evenly distributed, then fold in raisins or chocolate chips if using.
  6. Using a cookie scoop or tablespoon, drop heaping spoonfuls of cookie dough onto a lined baking sheet, leaving space between each.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. The centers will look slightly underbaked.
  8. Remove cookies from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack.
