Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, blending until just combined.
- Fold in the oats until evenly distributed, then fold in raisins or chocolate chips if using.
- Using a cookie scoop or tablespoon, drop heaping spoonfuls of cookie dough onto a lined baking sheet, leaving space between each.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. The centers will look slightly underbaked.
- Remove cookies from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
