  • 1 cup orzo pasta
  • 8 oz feta cheese 1 block
  • 2 cups cherry tomatoes halved
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 lemon zest from 1 lemon
  • to taste salt and pepper
  • for garnish fresh basil or parsley

Method
 

Preparation and Baking
  1. Preheat your oven to 400°F (200°C).
  2. In a pot of boiling salted water, cook the orzo according to the package instructions until al dente. Drain and set aside.
  3. In a large oven-safe baking dish, combine the halved cherry tomatoes, minced garlic, dried oregano, olive oil, lemon zest, salt, and pepper. Toss everything together until the tomatoes are well-coated.
  4. Place the block of feta cheese in the center of the tomatoes. Drizzle a little more olive oil over the feta if desired.
  5. Pop the baking dish in the oven and bake for about 20-25 minutes until the feta is soft and slightly golden, and the tomatoes are bursting.
  6. Remove from the oven. Add the cooked orzo to the dish, mixing everything together to ensure the orzo is well-coated with the creamy feta and the juicy tomatoes.
  7. Top with fresh basil or parsley for a refreshing finish, and serve warm.

Notes

For best results, use high-quality feta cheese and feel free to add other roasted vegetables like bell peppers or zucchini for added nutrition and flavor. Store leftovers in the refrigerator for up to three days.
