  • 1 pound mixed berries (strawberries, blueberries, raspberries) Opt for fresh, seasonal berries for maximum flavor.
  • 1 pound sponge cake or ladyfingers Cut into pieces that fit your serving dish.
  • 2 cups vanilla pudding Use flavored pudding like almond or coconut for a different taste if desired.
  • 1 cup whipped cream Make sure it is well whipped but not overwhipped.
  • to taste Mint leaves for garnish Adds a fragrant touch to your dessert.

Preparation
  1. Wash the berries gently under cool water. Slice the larger strawberries into halves or quarters and set aside to drain.
  2. Cut your sponge cake or ladyfingers into pieces that will fit your serving dish and place a layer of them at the bottom of your trifle bowl or individual glasses.
  3. Scoop half of the vanilla pudding over the cake layer and spread it evenly with the back of a spoon.
  4. Layer half of your mixed berries over the pudding, sprinkling a few for added decoration.
  5. Repeat the layers with the remaining sponge cake, vanilla pudding, and mixed berries.
  6. Top with a generous heap of whipped cream, piping it on for a fancy touch or dolloping it on as you prefer.
  7. Garnish with mint leaves on top for a pop of color.
  8. Refrigerate your Berry Trifle for at least 1 hour before serving.

Notes

For ultimate freshness, assemble the trifle shortly before serving. Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Avoid freezing.
