  • 2 cups rolled oats
  • 1 cup mixed berries (fresh or frozen, such as blueberries, raspberries, or strawberries)
  • 1/2 cup honey or maple syrup can substitute based on preference
  • 1/4 cup butter or coconut oil, melted coconut oil can be replaced with any vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped nuts (optional) can be omitted for a nut-free option

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, salt, and cinnamon.
  3. In a separate bowl, mix the melted butter or coconut oil, honey or maple syrup, and vanilla extract until smooth.
  4. Gradually pour the wet mixture into the dry mixture, stirring until combined. Gently fold in the mixed berries and nuts, if using.
  5. Line an 8×8 inch baking pan with parchment paper. Spread the oat mixture evenly into the pan, pressing down firmly.
  6. Bake for about 25 minutes or until the edges are golden brown.
  7. Allow the oat bars to cool in the pan for about 10 minutes, then cool completely on a wire rack before cutting into squares.

Notes

Store in an airtight container at room temperature for up to a week, or refrigerate for longer. For freezing, wrap individual bars and place in a freezer-safe bag.
