- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the rolled oats, salt, and cinnamon.
- In a separate bowl, mix the melted butter or coconut oil, honey or maple syrup, and vanilla extract until smooth.
- Gradually pour the wet mixture into the dry mixture, stirring until combined. Gently fold in the mixed berries and nuts, if using.
- Line an 8×8 inch baking pan with parchment paper. Spread the oat mixture evenly into the pan, pressing down firmly.
- Bake for about 25 minutes or until the edges are golden brown.
- Allow the oat bars to cool in the pan for about 10 minutes, then cool completely on a wire rack before cutting into squares.
Notes
Store in an airtight container at room temperature for up to a week, or refrigerate for longer. For freezing, wrap individual bars and place in a freezer-safe bag.
