Ingredients

Crust Ingredients
  • 1.5 cups graham cracker crumbs For the crust
  • 0.5 cups sugar Adjust for sweetness preference
  • 0.5 cups unsalted butter, melted
Filling Ingredients
  • 16 oz cream cheese, softened Ensure at room temperature
  • 1 cup powdered sugar
  • 1 cup sour cream Can substitute with Greek yogurt for lighter option
  • 1 teaspoon vanilla extract
Topping Ingredients
  • 2 cups mixed berries (strawberries, blueberries, raspberries) Fresh, for topping

Method

Preparation of the Crust
  1. In a medium-sized bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. The mixture should hold together when squeezed.
  2. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even crust.
  3. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Allow to cool while preparing the filling.
Making the Cheesecake Filling
  1. In a mixing bowl, beat the softened cream cheese with a handheld mixer on medium speed until smooth and creamy—about 2 minutes.
  2. Gradually add in the powdered sugar, mixing until well combined.
  3. Add the sour cream and vanilla extract, continuing to beat the mixture until everything is well incorporated.
Combining and Chilling
  1. Pour the cheesecake filling over the cooled graham cracker crust, smoothing out the top with a spatula.
  2. Cover the springform pan with plastic wrap and refrigerate for at least 4 hours, or overnight for the best results.
Serving
  1. Before serving, top your cheesecake with the mixed berries, evenly distributing them over the surface for that stunning burst of color.
  2. Carefully remove the cheesecake from the springform pan and slice into desired portions.
  3. Enjoy your Berry Cheesecake Bliss with your family and friends!

Notes

For best flavor and texture, prepare the cheesecake a day in advance. Store any leftovers in an airtight container for up to 5 days or freeze individual slices for up to a month.
