  • 1 loaf loaf of brioche or challah bread Cut into cubes.
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream Can be substituted with coconut cream.
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 cups mixed berries (strawberries, blueberries, raspberries) Fresh or thawed if using frozen.
  • 1 cup cream cheese, softened
  • for serving Powdered sugar For dusting.
  • for serving Maple syrup For drizzling.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cut the brioche or challah into 1-inch cubes and place them in a greased 9x13-inch baking dish.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, and cinnamon until well combined.
  4. In a separate bowl, soften the cream cheese and mix in one cup of the mixed berries. Gently fold this mixture into the torn bread cubes.
  5. Pour the egg mixture over the bread and berry mix, ensuring all the bread is soaked.
Baking
  1. Bake in the preheated oven for 45–50 minutes until the top is golden and the custard is set.
Serving
  1. Let it cool slightly, then dust with powdered sugar and drizzle with maple syrup before serving.

Notes

The casserole can be prepared the night before and soaked in the fridge overnight. Leftovers can be stored for up to 3 days in the refrigerator.
