  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce (or tamari for gluten-free option)
  • 2 tablespoons olive oil
  • 1 teaspoon ginger, grated (optional)
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Preparation
  1. Cook the rice according to the package instructions. Prepare it in advance so it's warm and fluffy when it's time to eat.
  2. While the rice is cooking, slice the beef into thin strips and chop the bell peppers and onion. Mince the garlic and grate the ginger if using.
Cooking
  1. In a large skillet, heat olive oil over medium-high heat. Once hot, add the beef strips to the pan, season with salt and pepper.
  2. Stir-fry the beef until browned and cooked through, about 4-5 minutes. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the onions and bell peppers. Sauté for about 5 minutes until slightly softened. Add garlic and ginger, cooking for an additional minute until fragrant.
  4. Return the cooked beef to the skillet. Pour in the soy sauce and stir everything together, allowing it to heat through for another 2-3 minutes, letting the flavors meld.
