Preparation
- Start by gathering all your ingredients to make the cooking process easier.
- In a skillet, heat your flour tortillas one at a time over medium heat for about 30 seconds on each side until flexible.
- On each tortilla, spread about 1/4 cup of refried beans in the center and top it off with 1/4 cup of shredded cheese.
- Fold in the sides of the tortilla and tightly roll it up from the bottom, ensuring everything is secure inside.
- Heat olive oil in the skillet over medium heat. Place each burrito seam-side down in the skillet and cook for about 2-3 minutes until golden brown and crispy. Flip and repeat on the other side.
- Remove from the skillet once crispy and slightly browned. Let them sit briefly, then serve warm with salsa and sour cream.
Notes
For substitutions, if you are out of refried beans, you can use black beans or pinto beans instead. Options for variations in cheese are also available, like using pepper jack for a spicy kick. For storage, keep in an airtight container in the fridge for 3-4 days or wrap and freeze for 2-3 months. When reheating, avoid drying by covering with a damp paper towel if using a microwave.
