  • 1 pound boneless, skinless chicken breasts
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup BBQ sauce (your favorite brand)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Aluminum foil For wrapping
  • Optional: chopped green onions or cilantro for garnish

Method
 

Preparation
  1. Preheat the Oven or Grill: If you’re using the oven, preheat it to 400°F (200°C). If grilling, prepare your grill to medium-high heat.
  2. Prepare Flavors: In a large bowl, combine diced sweet potatoes with olive oil, garlic powder, salt, and pepper. Toss until well coated.
  3. Prep the Chicken: Cut the chicken breasts into bite-sized pieces and mix in the BBQ sauce until thoroughly coated.
  4. Assemble the Foil Packets: Cut four sheets of aluminum foil, about 12x12 inches each. Place an even amount of seasoned sweet potatoes in the center of each sheet, followed by a portion of the BBQ chicken on top.
  5. Fold the Packets: Bring up the two ends of the foil and fold them together to seal, then fold the sides to create a secure packet that keeps all the flavors locked in.
Cooking
  1. Cook: Place the foil packets on the grill or in the preheated oven. Cook for 25–30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  2. Serve: Carefully open the packets (watch for steam!) and serve warm, garnished with chopped green onions or cilantro if desired.

Notes

For enhanced flavor, consider marinating your chicken in BBQ sauce for a couple of hours before cooking. You can also use pre-cooked chicken to save time. Experiment with seasonal veggies, like zucchini or bell peppers, for added variety.
