  • 2 lbs chicken breast, cut into 1-inch cubes
  • 2 tablespoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 3 tablespoons olive oil
  • 1 serving BBQ sauce (for glazing)
  • 1 serving skewers (if using wooden skewers, soak in water for 30 minutes)

Preparation
  1. In a large bowl, combine the smoked paprika, garlic powder, onion powder, salt, pepper, and olive oil. Mix well to create a flavorful paste.
  2. Add the chicken cubes to the bowl, and use your hands to ensure each piece is thoroughly coated with the marinade. Cover the bowl and let it sit for at least 15 minutes. For maximum flavor, marinate it in the refrigerator for up to 2 hours.
  3. While the chicken is marinating, preheat your grill to medium-high heat (about 400°F).
  4. Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
Cooking
  1. Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally. Use a brush to baste with BBQ sauce during the last few minutes for a caramelized finish.
  2. Make sure the chicken reaches an internal temperature of 165°F and is golden brown on the outside.
  3. Remove from the grill, let them rest for a few minutes, and serve hot with your choice of toppings.
