  • 1 cup cooked BBQ chicken, shredded Using leftover or rotisserie chicken is a great time-saver.
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to mix cheeses for more flavor.
  • to taste Butter, for spreading Use as much as you need for a golden crust.

Preparation
  1. Start by shredding your cooked BBQ chicken if you haven't already.
  2. Spread a generous amount of butter on one side of each slice of bread.
  3. On the non-buttered side of one slice, layer the shredded BBQ chicken followed by the shredded cheese. Top with the second slice of bread, buttered side up.
Cooking
  1. Heat a non-stick skillet over medium heat and carefully place the sandwich in the skillet.
  2. Cook for 2-3 minutes until the bottom side is golden brown.
  3. Flip the sandwich using a spatula and cook for an additional 2-3 minutes until the other side is golden and the cheese is fully melted.
  4. Remove the grilled cheese from the skillet and cut it in half. Serve warm.

Notes

You can customize your BBQ Chicken Grilled Cheese with jalapeƱos for a spicy kick or drizzles of ranch dressing for added creaminess. If you have leftovers, store in an airtight container in the refrigerator for up to 3 days.
