Ingredients
  

For the Tofu Burgers
  • 14 oz Tofu (firm) Block
  • 1 cup Barbecue sauce Ensure it's halal-friendly
  • 4 pieces Burger buns
For the Tomato Jam
  • 2 large Tomatoes, diced
  • 1 medium Onion, finely chopped
  • 2 tablespoons Sugar
  • 1 tablespoon Vinegar (apple cider or red wine)
  • to taste Salt
  • to taste Pepper
  • a few leaves Lettuce, for garnish

Method
 

Preparation of Tofu
  1. Start by pressing the tofu to remove excess moisture. Wrap the tofu block in a clean towel and place a heavy object on top for about 15 minutes.
  2. After pressing, cut the tofu into thick burger-sized slices. Marinate them in a bowl with 1/2 cup of barbecue sauce for at least 15 minutes.
Making Tomato Jam
  1. In a saucepan, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the diced tomatoes, sugar, vinegar, salt, and pepper. Cook for about 20 minutes until thickened, stirring occasionally. Set aside to cool.
Cooking the Tofu
  1. Preheat your grill or frying pan over medium heat. Cook the marinated tofu slices for about 5-7 minutes on each side or until they’re golden and slightly charred.
Assembling the Burgers
  1. Toast the burger buns lightly. Place a slice of the grilled tofu on the bottom half, add a generous spoonful of tomato jam, and top with a lettuce leaf.
  2. Finish with the bun top.

Notes

For substitutions, if you're out of barbecue sauce, a homemade sauce can be made using a mix of ketchup, molasses, and spices. If grilling isn't an option, pan-searing works well; ensure your pan is well-greased. Avoid choosing soft tofu for a satisfying texture.
