Ingredients

For the Skewers
  • 2 pieces chicken breasts, cut into bite-sized chunks
  • 2 pieces green onions, chopped (for garnish)
  • soaked pieces skewers (soaked in water if wooden) Soak wooden skewers to prevent burning
For the Sauce
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter option
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha Adjust to taste for spiciness
  • 1 teaspoon garlic powder
  • to taste salt and pepper

Method

Preparation
  1. Start by cutting the chicken breasts into bite-sized chunks. Ensure they are roughly the same size for even cooking.
  2. In a bowl, combine mayonnaise, sweet chili sauce, sriracha, garlic powder, salt, and pepper. Mix until creamy and well combined. Reserve a little sauce for drizzling on top later.
  3. Add the chicken chunks to the sauce, covering them thoroughly. Allow them to marinate for at least 15 minutes. If you have overnight, that’s even better for enhancing flavor.
  4. Preheat your grill or grill pan over medium-high heat. Thread the chicken pieces onto the skewers, leaving a bit of space between each chunk for even cooking.
Cooking
  1. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has a nice char. You can use a meat thermometer to ensure the internal temperature has reached 165°F (75°C).
  2. Remove from the grill, drizzle with reserved sauce, and top with chopped green onions. Dive into the delightful flavors of your Bang Bang Chicken Skewers!

If you have leftovers, refrigerate them in an airtight container for up to 3 days. For longer storage, freeze them for up to 2 months. When ready to enjoy, reheat in the oven at 350°F (175°C) for about 10-15 minutes.
