Preparation
- Start by cutting the chicken breasts into bite-sized chunks. Ensure they are roughly the same size for even cooking.
- In a bowl, combine mayonnaise, sweet chili sauce, sriracha, garlic powder, salt, and pepper. Mix until creamy and well combined. Reserve a little sauce for drizzling on top later.
- Add the chicken chunks to the sauce, covering them thoroughly. Allow them to marinate for at least 15 minutes. If you have overnight, that’s even better for enhancing flavor.
- Preheat your grill or grill pan over medium-high heat. Thread the chicken pieces onto the skewers, leaving a bit of space between each chunk for even cooking.
Cooking
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has a nice char. You can use a meat thermometer to ensure the internal temperature has reached 165°F (75°C).
