  • Wooden skewers soaked in water Soak for at least 30 minutes
For the marinade
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a healthier alternative.
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce Adjust based on your spice tolerance.
  • 1 tablespoon lime juice

Preparation
  1. Soak the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
  2. In a medium bowl, combine mayonnaise, sweet chili sauce, sriracha sauce, lime juice, salt, and pepper. Stir until well mixed.
  3. Add chicken pieces to the sauce and mix until thoroughly coated. For deeper flavors, let marinate for about 30 minutes.
Cooking
  1. Preheat your grill or grill pan over medium heat.
  2. Thread marinated chicken pieces onto the soaked skewers, ensuring not to overcrowd.
  3. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and charred.
  4. Remove from the grill and serve with extra sauce on the side, if desired.

Notes

Store leftover skewers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat in the oven at 350°F for 10-15 minutes.
