  • 1 loaf loaf of French bread, cut into cubes
  • 4 pieces ripe bananas, sliced
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 cup butter melted, for drizzling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cut the French bread into cubes and place them in a greased 9×13 inch baking dish.
  3. Evenly distribute the sliced bananas over the bread cubes.
  4. In a large bowl, whisk together the eggs, milk, brown sugar, vanilla, and cinnamon until fully combined.
  5. Pour the custard mixture over the bread and bananas. Gently press the bread down to ensure it absorbs the mixture.
  6. Melt the butter and drizzle it over the top of the casserole for extra richness.
Baking
  1. Cover the dish with foil and place it in the preheated oven for 30 minutes.
  2. After that, remove the foil and bake an additional 15 minutes until the top is golden brown.
Serving
  1. Let it cool for a few minutes, then slice and serve with a dollop of whipped cream on each piece.

Notes

Feel free to use whole wheat or gluten-free bread as alternatives. For best results, let the bread soak in the custard mixture for at least 30 minutes or overnight. Store leftovers in an airtight container for 3-4 days or freeze individual portions.
