- Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
- In a large mixing bowl, mash the ripe bananas with a fork until smooth.
- Add the rolled oats, honey or maple syrup, cinnamon, salt, nut butter (if using), vanilla extract, and any desired mix-ins. Stir until well combined.
- Pour the mixture into your prepared baking pan and spread it evenly, pressing down gently.
- Bake in the preheated oven for about 25-30 minutes or until golden brown on top.
- Let it cool in the pan for about 10 minutes, then transfer to a wire rack. Once completely cooled, cut into squares or bars.
Notes
Store in an airtight container at room temperature for up to 4 days. Refrigerate for up to a week or freeze for up to two months. Reheat in the microwave for 10-15 seconds if desired.
