Preparation
- Peel the two ripe bananas and mash them in a mixing bowl until smooth.
- Add the chia seeds, almond milk, maple syrup or honey (if using), and vanilla extract to the mashed bananas. Whisk until well combined.
- Cover the bowl and refrigerate for at least 4 hours or overnight to allow chia seeds to absorb the milk and thicken the mixture.
- Once set, stir the pudding well and spoon it into serving bowls.
- Top with fresh fruit or nuts if desired.
