  • 2 pieces ripe bananas Make sure they are ripe for the best flavor.
  • 1/4 cup chia seeds Chia seeds will absorb liquid to create a thick pudding.
  • 2 cups almond milk You can use any milk of your choice.
  • 1-2 tablespoons maple syrup or honey Optional sweetener; adjust to taste.
  • 1 teaspoon vanilla extract Adds flavor to the pudding.
  • to taste fresh fruit or nuts For topping; optional but recommended.

Preparation
  1. Peel the two ripe bananas and mash them in a mixing bowl until smooth.
  2. Add the chia seeds, almond milk, maple syrup or honey (if using), and vanilla extract to the mashed bananas. Whisk until well combined.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight to allow chia seeds to absorb the milk and thicken the mixture.
  4. Once set, stir the pudding well and spoon it into serving bowls.
  5. Top with fresh fruit or nuts if desired.

Notes

For best results, let the pudding set overnight. Store in an airtight container in the refrigerator for up to five days.
