Preparation
- Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth. Add melted butter, half-and-half, sugar, egg, and vanilla extract. Mix until combined.
- Gradually add flour, baking soda, baking powder, and salt until a soft dough forms.
- On a lightly floured surface, roll out the dough into a rectangle (approx. 12x8 inches).
- In a small bowl, combine the brown sugar and cinnamon. Sprinkle this mixture evenly over the rolled-out dough.
- Starting from one long edge, carefully roll the dough into a tight log. Slice into equal pieces, about 1-inch thick.
Baking
- Arrange the rolls in the prepared baking pan and bake for about 20-25 minutes or until golden brown and cooked through.
- Allow to cool slightly before frosting with a cream cheese frosting or a simple glaze if desired.
Notes
Customize the filling by adding nuts, chocolate chips, or dried fruit. Store cooled rolls in an airtight container at room temperature for up to two days, refrigerate for about a week, or freeze for up to a month.
