Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mash the ripe bananas with a fork until smooth. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the mashed bananas, egg, and vanilla extract to the butter-sugar mixture. Beat until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
- Gently fold in the chocolate chips until evenly distributed.
- Drop heaping spoonfuls of dough onto a parchment-lined baking sheet, leaving about 2 inches between each cookie.
Baking
- Bake in the preheated oven for 10-12 minutes, or until the edges begin to turn golden brown.
- Remove from oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to one week. For longer storage, freeze cookies in a freezer-safe container for up to three months.
