Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mash the ripe bananas with a fork until smooth. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the mashed bananas, egg, and vanilla extract to the butter-sugar mixture. Beat until fully incorporated.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
  6. Gently fold in the chocolate chips until evenly distributed.
  7. Drop heaping spoonfuls of dough onto a parchment-lined baking sheet, leaving about 2 inches between each cookie.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges begin to turn golden brown.
  2. Remove from oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to one week. For longer storage, freeze cookies in a freezer-safe container for up to three months.
